Along with other Marvel comic book franchise, X-Men is one of the long running and successful film franchise. Fan favorite Wolverine also belongs to this franchise. It debuted back in 2000, which is 8 years prior to the release of first MCU movie, Iron Man. But, now this movie takes place first in the, you can say, Extended MCU (It's a name given by me, not an official name).
Just like with the MCU movies, there are two ways to go about watching X-Men movies; Chronological and by their Release Order. Of course, going by the release order is best in this case too, so you should watch in this order.
There are different timelines, and not to mention, there are many plot holes too, so don't be confused or wonder if I gave you the correct order.

X-Men Movies in Chronological Order
As I have mentioned earlier, watching movies in chronological order is actually not good, because there are sometimes reference to the event of a movie which would take part later. So, I'd recommend you to watch the movies in the order they were released. But, if you still want to watch them in chronological order, then I don't have any other option than to present it to you.

Why Certain Characters are Played by Different Actors?
The continuity in X-Men franchise is NOT as good as MCU, so there are many plot holes, which can confuse you. Apart from this, there is one more thing which confuses the viewers; different actors for same character. The reason for this is that the original X-Men trilogy, that is, X-Men (2000), X2: X-Men United (2003) and X-Men: The Last Stand (2006) takes place near the time of their release. But, X-Men: First Class (2011) takes place 38 years prior, in 1962, to the first X-Men movie and serves as a prequel to the original trilogy. This is the main reason for the characters like Charles Xavier and Erik Lahnsherr and many other characters to be played by different actors.
